You're right , Pete Seeger adapted the song from the Book of Ecclesiastes before Dylan did it. I forgot.

Killdozer's cover of Janet Jackson's "Nasty" is better than the original.

Contemporarily speaking, there's some great covers out there, but harder for me to make the judgement that they're better than the original. Some great versions though, to my ear, include:

Zeke "Midnight Nambla" (Turbonegro)

Nashville Pussy "First I Look At The Purse" (Contours, Smoky Robinson) - ok, this one goes back to the 60s

The Dictators "Search & Destroy" (Stooges)

The Candy Snatchers "Suffragette City" (Bowie)

Supersuckers "400 Bucks" (Rev. Horton Heat)

Man Or Astro-Man? "Dueces Wild" (Link Wray)

Pretty much any by The Byrds - My Back Pages , Mr. Tambourine , Turn , Turn ,Turn , etc.

Elvis did a total of two Dylan songs. "Don't Think Twice , It's All Right " was just a studio jam that went on for 10 minutes , but really drove the point home......a putdown to the one who put him down. Saying "iT AIN'T NO BIG THING" WHEN IT IS.

OK , to be fair , I heard Dylan doing "It Takes a Lot To Laugh , It Takes a Train To Cry" , recently. It beats Hell out of Blue Cheer's version.

Well, since most of us grown up with R´n´R, Rock, Punk and so on, i guess is not too difficult to find more appealing versions of some old Jazz, Folk or old R´n´B songs. 
We may have heard in most cases the cover earlier than the original one,  
or maybe never heard the original at all. 

Personally i´d be more curious about comparing songs which were both, original and cover, quasi contemporary, or from not so extremely different musical genre.
What do you think?

BUT: I´ll spend a beer to anyone who comes with a better version of the original "Smokestack Lightning" by Howling´Wolf! ;)

My first show was Aerosmith at Jones Beach in like '95. 

First punk rock show was a local Long Island show with 48 in the Basement and The Skum at  a long-defunct club called Blue.

Best show was The Legendary Shack Shakers at The Middle East in Boston in '08. The closest thing to a punk rock hoedown. Lots of drunk dancing. Awesome.

First show: 1991 New Kids on the block. My folks didn't want my sis to go by herself so I had to go. 90 minutes of chicks screaming still haunts me to this day

First punk show: 1996 Glasshouse Pomona, Ca. Line up: Red Aunts, New Bomb Turks, Voo Doo Glow Skulls, Union 13 and Strife. My friends and I ditched school to buy Voo Doo's new album at Rhino records because you got a free ticket to the show. That show changed my life.

Best shows: The Zeros @ The Troubadour, The Hives @ The Glasshouse, Japanther @ VLHS, Night Birds @ The Blue Star, NObunny @ The Alexandria, BBQ Show @ El Cid, OBN III's @ The Smell, Guitar Wolf @ The Knitting Factory, 5,6,7,8's @ Knitting Factory...just off of recent memory.

I did see No Doubt at a back yard kegger in Anaheim for $2 bucks 1996. Back when she used to dress up as Alice in Wonderland...I saw Green Day and AFI @ Gilman St in San Francisco for free. 1999 I believe.

I was on 2001 Warped Tour and saw AFI, CIV, Rancid, AFI, Bouncing Souls, Murphys Law, Keith Cool, Me First and the Gimme Gimmes on stage. Priceless memories. Thanks Lyman...

Meh. Dollrods suck. They played in St. Louis several years ago and were too unimpressed with our pizza joint/southside bar venue to give a rat's ass about us, so why should I give a rat's ass about them? As they were setting up, they realized they were missing one 
of their bags that contained their stage costumes (pasties, special panties, etc.). We waited a LONG time for them to start... maybe an hour? Something like that. You could tell they were pissed. They were mostly hanging outside the club, yapping away on cell phones, complaining about everything and in real foul moods. They even had a dog with them (who the fuck takes a dog with them on tour?) and were playing with it or whatever out on the sidewalk. They didn't like the bar and they weren't at all happy about the crowd (it was an unusually small turnout, even for a weeknight, but especially for a weekend). So they finally took the stage a little after Midnight and played maybe 5 or 6 songs... really short set. If it was more than 20 minutes I'd be really surprised. Everyone was pretty surprised when they just suddenly stopped, put down their instruments, and disconnected their shit. No "thanks for coming," "sorry we can't play anymore cuz we don't have our costumes," nothing. It'll be a cold day in Hell that I ever go see them again!
